Instructions
Make the Cookie Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon. Set aside.
- In a separate mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until fully combined.
- Gradually mix in the dry ingredients, followed by the graham cracker crumbs. Stir until the dough is smooth.
Bake the Cookies
- Scoop dough onto the prepared baking sheet, spacing them 2 inches apart. Flatten each slightly.
- Bake for 10-12 minutes, or until the cookies turn golden brown.
- Remove from the oven and let them cool completely before adding the filling.
Prepare the Cheesecake Filling
- In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Assemble the Cookies
- Spread a generous layer of the cheesecake filling over each cooled cookie.
- Drizzle with caramel sauce and sprinkle with extra graham cracker crumbs for garnish.
